Abstract

Global trends show that, due to the growing demand for fish products, the share of fish farming is growing. In Republic of Armenia, 95% of the demand for fish products is provided by fish farming. The production base of fish farming in Armenia is made up of complex freshwater reservoirs with an area of more than 3 thousand hectares. The growth of fish processing is accompanied by an increase in the formed by-products of cutting and waste, the mass of which can reach 70% of the mass of the fish being processed. Fish waste contains protein and lipid fractions, and with proper complex processing, it is possible to obtain marketable products - fish meal and fish oil, the demand for which is increasing from year to year. Fish, secondary raw materials, which are currently waste, have valuable biological potential and, therefore, are a good raw material for obtaining fish oil. The development of a technology for processing fish waste will increase the profitability of fish processing enterprises, turn the previously existing technology into a waste-free one, and also resolve the issue of ecology. The paper proposes a method for processing fish waste to obtain marketable products - fish oil and feed meal. The extraction of fish oil depends on the content of the desired component in the original source - waste. A schematic diagram of fish waste processing and quality indicators of the obtained fat are presented.
